Who we are?

Mathilde Civet, originally from the southwest of Burgundy, comes from a farming family. She holds a Bachelor in wine and spirits trade and a Master’s degree in Vine, Wine, and Terroir from the wine university in Dijon.

Jonathan Habert, originally from Chablis, comes from a family that has been established in the vineyard for several generations. He holds a Bachelor in viticulture and oenology from the Viti in Beaune and a Master’s degree in Vine, Wine, and Terroir from the wine university in Dijon. He has been established since 2023 on 4.25 hectares in the Chablis appellations. We practice integrated viticulture that respects living systems and the environment.
Eager to combine our expertise, we founded LE CHAMP DES PENSÉES in 2025. We vinify exclusively grapes from the plots we farm. Our philosophy? One plot = one wine. Each cuvée is made using indigenous yeasts and with minimal intervention.
